Yummy Biscuits!!!

Hi,

I am going to post a recipe that "aberger" shared with me. I love these so much, they are so easy to make. They are also so filling and delicious, perfect with breakfast or added to any meal.


I am craving them right now, so I am going to make another batch of them tonight. 


 

 
Spelt Biscuits:

 
2 cups spelt flour


1 tbsp baking powder


1/2 tsp salt


6 tbsp butter


* 2/3 cup milk (or If you can't have milk, substitute water or chicken stock, and increase the amount of butter by about two tbsp:)

 
 


 
preheat oven to 450  stir together flour, baking powder, salt.  Cut in the butter until the mixture resembles coarse crumbs.  Gradually stir in the *milk until the dough pulls away from the sides of the bowl.  Pat out on a floured surface to about 1 inch thick.  Cut the biscuits and place on a baking sheet.  Bake 12-15 minutes until the bottoms are golden brown.

I make these at least twice a week.  I saw the post abot a month ago?  The only difference is that I use Kamut flour since I dont care for Spelt flour..  These are a staple for me.

For us gluten-free girls... do you think this recipe would work with rice flour? I have never tried Kamut flour... ironically, I have some. They sound great!

Kamut also has gluten. I've made some version of a bisquit with rice flour and they serve their purpose even if they aren't amazingly delicious!

do work with rice flour! I have been thinking about these biscuits and how I could make them gluten free, so this morning I did. They were wonderful. My daughter ate two of them. I ate two with sausage, egg, and avocado. I made half a batch to make sure it would work. (I do that often just in case it doesn't work out with gluten free baking.) I subbed olive oil for the butter, and I subbed 3/4 c. brown rice flour and 1/4 c. sweet rice flour for 1 c. of spelt flour. I also added in 1/2 t. guar gum to give them some stability. (I asked Dr. B about guar gum for my gluten free baking, and she said it was okay, but it's probably good to check with her first. I try to rarely use it, but I thought these might need a touch.) I then subbed plain yogurt for the buttermilk.

Mrs A, what kind of sausage do you eat? I thought they all had nitrates in them. Do you make your own?

Yes, I do make my own sausage. It's really easy and so good. I use it in all kinds of recipes from soups to stews, to pasta and paninis. Here it is:
 
Turkey Sausage
1 lb. ground turkey
1/2 t. each salt, fennel, thyme
1/4 t. garlic powder & nutmeg
 
Shape into small patties and fry in olive oil on both sides until done. I am on list 3, and I tolerate these mild spices. But when I was on list 1, I used garlic powder, salt, and basil only. Still good!

Yes, these do work with rice flour and are delicious! Mine turned out to be more like a cookie because the flour does't stick together as well, so just rolled in balls and placed on cookie sheet. Yum!

I make them twice a week and just added blueberries this weekend to my diet with no pain so next time I make them, I will add blueberries!  Let me tell you how HAPPY eating blueberries alone has made me.  Oh, how I have missed them.  : )

Why didn't I think of that? I bet it would be amazing with some ricotta or plain yogurt on top.

And experiment with adding herbs and cheeses to the biscuits as you can!
