Hi all,

The couple pizza recipes on here didn't totally work for me, so I played around until I had a good recipe. It turned out great so I wanted to share.  The biggest find was Bionaturae brand tomato paste, only ingredient is organic tomato paste and it's in a jar!  You can find at Whole Foods - works perfectly as pizza sauce.

(If you're on List 2, you could do everything but the tomatoes and spread more olive oil atop crust instead.)

Happy eating!  Laughing

Homemade Pizza - yeast-free, sugar-free

Ingredients:

Crust:

2 ¼ - 2 ½ cups spelt flour

1 tsp. baking powder

1 tsp. salt

2 tbsp. butter

½ - ¾ cup warm water (start with half cup, then slowly add more as needed)

Top:

10 oz (1 ½ jars of Bionaturae) tomato paste

10 oz mozzarella cheese, shredded

Allowed veggies, if desired (i.e. onions [red onions esp. good], bell peppers, spinach, etc.)

Allowed meats, if desired (brown on stovetop first)  (i.e. ground turkey/beef)

Spices & herbs to taste:  oregano, basil, salt, pepper, garlic - fresh or dried

(if using fresh basil put it on when 5 min left to cook)

1 tbsp. olive oil

Directions:

  • Mix dry ingredients.
  • Add butter and ½ cup water.
  • Knead by hand, adding more water only if needed and slowly until consistency is not soggy/sticky but not dry/crumbly.
  • Put in sealer container and let sit for 20 minutes.
  • Heat oven to 425.
  • With rolling pin, roll out dough on floured/sprayed wax paper surface. Roll dough to the size of your pizza tin.
  • Spray pizza tin with no-stick spray.
  • Flip wax paper over and peel dough off and onto pizza tin.
  • Evenly spread olive oil atop crust (to keep tomato paste from soaking in).
  • Cook crust in oven for 10 - 15 minutes.
  • Remove crust from oven. First, spread tomato paste on top. Then, all spices & herbs. Then, mozzarella cheese. Then, veggies and meat.
  • Cook pizza for 20 minutes or so, to desired crust crispness and pizza done-ness.

Lisa,  Thank you for sharing your pizza recipe.  I can't wait until I am on list to 2:-)  My husband is also a great cook and I am looking forward to adding recipes as he creates them.
