Hi sidmakol! What part of the country are you living in?  I'm sure more people will chime in if you tell us where youre at, or a general area if you dont want to disclose that info.  :)

If your store carries ANY French Meadow products, ask them nicely to include the Spelt/sugar-free/yeast-free. I was told by French Meadow that many distributors don't carry this kind because people don't ask for it, so the distributor drops it. As soon as I asked my local store to pick it up again (they already carried some French Meadow), they were happy to comply, and I stocked up my freezer.
I also love to make my own. I buy sprouted spelt flour (easier to digest, less inflammatory) at Shiloh Farms. They have a lot of great products. Love their flours!!!

Hi sidmakol,
Do you have any Sprouts markets nearby? I have them order me a case when I need them. They also will give you a case discount.

S
I will reply to your PM as well. I had to ask a small, local, natural grocer to add this to their distribution. WF and other chain stores were not good at following up with my request, but the small store was very helpful.
Honestly, I often prefer to make my own with sprouted spelt flour, which takes under 10 minutes. It is a bit sweeter and makes a great morning toast (The French Meadow uses wild yeast/sourdough process which gives it more of a sourdough taste)

Mimi, do you use breadmaker or pans? I am thinking about baking bread for kids sandwiches, not sure if I need a breadmaker. I prefer not to use one because I think it is plastic inside.

Hmmm. I am still on List 3, so I can't make yeasted breads. So I just make my spelt quick breads in a loaf pan. They slice ok, but are a little crumbly, so not great for sandwiches. I buy flourless, sprouted bread for my kids. They got used to it pretty quick and it is only sweetened with dates, or has zero sugar. Trader Joes makes an organic whole wheat sprouted loaf, and Alvarado St. makes sourdough and whole wheat sprouted loafs. My kids like them. I store them in the fridge.
My dad used to make home-made bread with a sourdough or commercial yeast starter, and he never used a breadmaker. It came out just fine in a loaf pan. But requires some proofing, etc... There are some great websites on using wild yeast (sourdough starter) to make sourdough and whole grain loafs. I think I will try this when I am on list 4.

I know French Meadows is a sourdough spelt bread, this is okay for list one isn't it? I don't eat it very often, but just want to make sure I am not wrong in thinking this is okay?!

I discovered it on List 1/2 and asked Dr. B and she said it was ok. Maybe check anyway for your peace of mind? Wild yeast is not a pro-candida yeast. Commercial yeast is. That is why I think that sourdough is allowed on List 4 for many people. I just dont understand quite why French MEadow is ok on list 1, but it has NO commercial yeast, so maybe Dr. B is fine with this?

My understanding is that the french meadow bread is just spelt and water; so its ok for list 1/2.  I personally make my own at home--either the biscuits listed by Annie awhile ago or squash bread which I listed.

Where I get confused is that they describe their bread as "naturally leavened" which by all accounts I can find means they use a leavening process, which historically would mean a sourdough starter, or wild yeast. I don't know what else would explain the slight "chewy-ness" of this bread, as compared with my bakig soda quick-bread. Many other companies (including some bakers I know of locally) that make breads like this and don't list the "yeast" does not mean there is not wild yeast.
Dr. B posted this a while back:

Hi Everyone,
Ok now I'm worried!  I've been using French Meadow spelt bread for about 1 month.  I thought I read many posts that said it was Okay to use.  I've been enjoying this bread and tolerating it.  The ingredients are: Organic spelt flour, filtered water, sea salt.  It also says " Not leavened with Baker's yeast".  I will ask Dr. B at my next appointment on March 7th and hopefully it's fine to use.

I mean--pacific bread was listed as list 1 on the gentle products guide--and french meadows is the same.  I feel like that should indicate that its fine--but its always better to ask.  She changes the lists sometimes.  Really though I think that frozen bread is the most foul tasting thing and recommend the 10 minute home made squash bread instead!!!  If you make the squashbread in a big pan, you can get a nice thin slice!

I had my appointment today with Matia, and had so many thoughts and questions on my mind, it totally slipped my mind! I have to email her tomorrow for an update, so will add this to my email just so we have clarification! I am sure it is okay for list 1, but just got me thinking with the sourdough process Mimi described that perhaps I was wrong with my thinking! I will post as soon as I get my response from Matia!

That is definitely sourdough meaning it is naturally leavened. it is not a quickbread. I am also curious why that is ok but not homemade sourdough. They are the same thing. Natural sourdough is totally different from bakers yeast though.

Hi Everyone,
I emailed Dr. Brizman and asked her if French Meadow Spelt bread is OK and she said "YES".  She did not give me a reason but I'm excited to hear that it's fine to eat because I eat it every morning with my eggs.

Oh good! I won't bother her with that question again then! Thanks Sandi!
