food ideas needed :(

Well- I think I am going to try cutting out rice. I already don't do spelt so this will be really tough for me. I am just not moving along the way we had hoped and so I need to try and see if this helps.

 

I need some starch ideas - i guess all potato- for breakfast especially because I really love my rice toast with eggs in the am.

 

Any  help would be appreciated. I am pretty bummed. I was hoping I could add almonds or something crunchy but that was nixed.

 I have been thinking about you all morning, and I think you might be able to sub potato flour into the recipe for Pliable Flatbread that I shared in place of the almond flour. (You can put it in the search engine and it will come up.) Then you could use that for your bread since you will be losing your rice bread. My husband is on a grainless diet for health reasons right now, so I am a bit familiar with going grainless. I do have a few recipes that I haven't tried yet for him which might be of help to you. 
 
Pesto" Pasta"
 
Saute some cabbage until nice and limp in olive oil with some salt, toss in some cooked chicken and pesto until warmed through. (I shared my recipe for pesto some time ago.)
 
 
Perfect Oven Fries
Soak potato slices for 30 minutes. Drain and dry with a towel. Toss with oil. 400 degrees for 35 minutes on a parchment lined cookie sheet. Toss halfway through.
 
 
Zucchini Latkes
1-2 c. shredded zucchini squeezed dry in a towel
1-2 eggs to moisten
salt and garlic powder
bit of shredded onion (if tolerated)
 
Mix together and shape into small mounds in hot skillet with oil. Saute until nicely brown on each side.
 
 
Rachel Ray's Breakfast Scramble Revised 
Take diced red potatoes with a bit of onion, saute in oil with garlic powder, salt, and a bit of basil. You can even add in some zucchini diced as well. Cook it until it's all nice and tender.( You can also saute in some of the sausage that I shared some time ago too.) Then put it on a plate, and cook an egg or two in the same pan. Serve on top of the scramble. This we have tried, and it is so good.

Hi Deir, (and Mrs.A;)
   My favorite breakfast treat is to buy ground turkey, chop some onions and potatoes, throw together in a skillet with butter and let cook. I sprinkle in some garlic salt, pepper and dill... sometimes I put a slice of muenster cheese on and let it melt... yum! My favorite!

Bummer about rice--I'm thinking about doing the same.
 
I've been having steamed potatos in the am and at night.  It takes 10 minutes and it is SO GOOD.  I get yukon gold from my co-op.

Hi Deir! I am feeling your pain. I am only a week into going grainless, and am running out of food ideas myself!:( Thanks Mrs. A and Katie for sharing some ideas! Researchnerd I also enjoy steamed potatoes! Good and easy to make!

you just chop them, and steam them for 10 minutes.  flygirlsam gave me the idea.  she is a good person to ask about grainless food ideas btw.

Is there anyone out there who can tolerate spelt but not rice? Or anyone who can have SOME rice but tnot too much? I haven't improved much since we started treatment but I have had many good days and I was certainly eating rice on those days so I am trying to figure this thing out. Would rice still be the culprit if I've eaten it with no bad result? Could it be that I was eating too much? i know I can ask Matia this but I wanted your opinions.

Hi Deir,
   I am so sorry that you have to go back to the "food drawing board" to try to figure out how to gain some bladder stability. I think the answer to your question is that any combination of food intolerances can exist. I can have rice and potatoes, but no gluten-so no spelt either. I can eat avocadoes in smaller qualities and yogurt sometimes, which means I am not ready for either of those foods. So, I back off when I am having a less stable day and push a little on a stronger day. It's an infuriating game of back and forth with the food, but it has gotten much better. Have you been able to experience an  entire day of little to no bladder symptoms yet? I feel as though when that happens, you can be sure the treatment is really working;)

Hi Katie- the issue with me is I had those days even before the treatment. I have always been extremely up and down. I think the treatment for me has opeend up a "can of worms" BUT that can needed to be opened!! In Jan and Feb i thought I had turned a corner and was feeling generally better but this past month has not been good at all. All along- it has been impossible fro me to add foods because I have had no stabillity. I think i am generally mild in comparison to many and for that I am grateful. I thought I'd be a fast patient, but I'm not. I don't want to scare anyone because I am not in misery most of the timel. I think it is pretty interesting that I of all people would be a slower patient. I already ate a super healthy diet etc befoer the treatment. I sometitmes think that It could be thta my "bad" is other people's "medium" so they feel improvement when they get to this level- does that make any sense? MY 2 yr old is tugging on my jeans!
No- I never have a full perfect day but I have long spans of pretty ok. I had those before I went to CA too. But since I know the herbs and pros stirred thingas up a bit- i try to only judge my progress since last Maya nd for me it has been pretty rocky. I still beleive this is the way to heal from this illness so we just need to figure out what is holding me back. I had a rough night Friday after Dr B confirmed that yes- I haven't had it easy. I am glad she is so honest though. I just can't believe I am struggling. I am almost embarrassed in a way-I want to be doing well!!! I also caught several viruses this winter which shows that my immune system is still struggling. Oddly- this was the worst winter for me i think ever as far as that goes!

I think I'm having similar thoughts. I have cut out spelt, gluten,rice and rice flours and I'm also trying to lose eggs from my diet at the moment too. I'm also having a hard time finding improvements so keep going back to my diet and it's tricky!!
I also have ground turkey with diced celery cauliflower broccoli etc and a little butter or oil. I have also made patties from ground meat to have with veg. I can't think of anything else I can have though!! I find it hard to eat this every day though I like the idea of the steamed potatoes.
 
I have a lot of weight to lose And an underactive thyroid so try not to eat top much potato but it's hard with no other starches and no grains.
