How does everyone eat their veggies? :)

Hey! So I'm wanting to get some feedback from y'all on how you make sure you get enough veggies breakfast, lunch and dinner. Do you grab some raw veggies? Always eat a salad? A favorite way to store and eat them? Just looking for ideas. I'm starting to get food aversions from raw broccoli and cucumbers because I eat them so much just because its convenient to throw on a plate. Anyways just thought we could share ideas since its super important to eat our veggies!

I don't do very well with raw veggies.... I cook a lot in my crockpot, and I just throw veggies in there along with chicken or beef. So my lunch, and dinners most always have veggies in it... I put carrots, celery, cabbage, or any other root veggies.... Also when I make rice, I add corn, carrots, and peas into it. For Breakfast you can always add green peppers to potatoes, or eggs. Or spinach and eggs... if you make an egg fritata you can add a lot of veggies to that.

Calieve, I also love the crock pot. Those are great ideas!  I have this weird thing where I feel like I need to eat most of my veggies raw.  I'm pretty sure this comes from my "juicing" phase in life where everything I ate was juiced, raw and alive.  But I know that Dr B. probably would say that its not necessary.  Obviously its not otherwise it would be written into the diet.  But yeah, Its so much easier to eat veggies when they are cooked.  I'm going to try using the crockpot and pressure cooker more for that.  I really struggle with breakfast, this is kind of embarresing to admit but I can not figure out how to cook breakfast potatoes!  They always end up soggy.  Any tips?! And what the heck is an egg fritata?! lol! It sounds great! I have lots to learn in the cooking department *sigh*   :)

I often roast vegetables in the oven; onion, peppers, tomatoes, courgette (i'm on list 3). Then i stir these vegetables into cooked pasta, and also some salad leaves. Cheese on top, delicious!!
I often make soup. Fry onions, celery, leeks, add chopped tomato, stock, and since last week i can add some white beans, which makes it more filling.
I also make frittata. I fry some bacon, then onions, leeks and set aside to cool. I add eggs, cheese, bits of broccoli or asparagus and then mix it all up and back in the frying pan.
Risotto is also good for adding vegetables to. I make risotto where at the end i stir in little tomatoes and salad leaves, and serve it with fish.
In the morning i often have avocado with goats cheese on a rice cake.
I love cooking!!
I'm not doing great with salads at the moment, or raw vegetables. I hope that the summer will help with that as i'm growing my own vegetables and there will be an abundance in the summer. It is inspring to hear what other people eat, this subject was a great idea.C

Thank you for the ideas CO.  Soup sounds really good especially with the cold weather we're having here in AZ.  It snowed here yesterday, how crazy is that?  Snow in Scottsdale! I would LOVE to have bacon.  I thought that we couldnt eat pork?? Ive never tried goats cheese, is the flavor pretty mild?

I love steamed veggies also Ally.  Arent you glad we can eat butter and salt?!  Butter makes everything better! 
 
Keep the ideas coming you guys.  Veggies are a big struggle for a lot of people, its SO helpful to get inspired with new recipes and ideas.

I had so much fun reading this thread!  It's nice to see what everyone does cooking-wise.
 
I second the notion that cabbage is awesome-my favorite way to have cabbage is to first carmelize some onions in butter (of course) and then throw the cabbage in, too.  Saute it on low heat with salt. Then add a tiny bit of spring water and cover it for a couple of minutes.   And the more butter the better!
 
I also love to take a head of cauliflower and slice it like a loaf of bread, toss the slices in a good amount of olive oil and salt and bake them at 350 or so, flipping once.   Or, if you're roasting a chicken, cut up really any veggie that can stand slow baking and put them on the bottom of the dish.  Set the chicken on top and all the juices and fat from the chicken seep out and make the roasted veggies SOOOOO good!
 
In the spirit of putting in a good word for whole milk yogurt- this stuff has changed my life!  I am obsessed and eat it as my breakfast protein most days now with a few blueberries (and a large side of steamed veggies...) I prefer Stonyfield farm because it's organic, but FAGE total full-fat is an amazing treat, too.  Put a few blueberries in there and you'll feel like you're eating a decadent dessert!

The cauliflower sounds really good, I am excited to try this! Oh yes, yogurt is so yummy! The funny thing I hated yogurt before, amazing what you learn to love and crave on this diet!:)

I'm on list 3. When i asked Dr. B about bacon she said she wasn't sure. She said i could have bacon occasionally. So i think, when used in a soup to flavour it, it isn't that much.
The goats cheese is lovely, mild. Made locally!
