List 5 Dessert Resources

Hi Ladies,

    We have a slew of March birthdays in my family.....(mine included) and this has not been an easy year for our family so I am determined to throw a nice party and invite the family and friends who have helped us. Although I am on list 5, I have not ventured into the world of desserts much at all and have somehow missed our ground rules. I have searched the site and feel I have a better grasp on this, but would love to hear some of your recipes that you have found successful and would serve as a great at a birthday party.

i am going to try the "cookie" recipe Dr M just posted , but would like a few other suggestions. Also, any company you know that is a good resource for where you buy ingredients like raw cocoa would be very helpful.

Hi Katie,
Whenever we have a family gathering I am in charge of making the ice cream. You do need an ice cream maker, but everyone goes nuts for my ice cream :) I just tried the "cookie" recipe that Matia posted and it is really good and so quick to make! I've also made breads and cookies using the Pamela's baking mix and wax orchards fruit juice sweetener. No one ever notices that the suger has been substituted out. 
Here is something Matia posted a few years ago about desserts, it recommends substituting agave 1:1, personally I find that to be too sweet and usually dial it back by about 1/3.

When baking for the Paleo crowd, I've used this recipe that is sweetened with dates to great success - unfortunately it is made with coconut flour:

Many of the recipes on this site use coconut flour, but with a little experimentation, I bet they could be adjusted to almond flour.  I think a 3/1 ratio is about right for substituting almond/coconut.  Coconut is very absorbent and behaves quite differently.  You can subsitute butter for coconut oil 1/1 in the recipe (I did that and it worked fine).

It might be too late for these particular events, but I have a book called "Sweet and sugar free" by Karen barkie that I got on Amazon. It has a lot of great ideas in it. You have to adapt a few things but it is very helpful.

Katie for almond flour the hands down best beyond compare is Honeyville. But need to buy on line. So much better for baking than Bobs or any other....

Hi Katie!
Happy Birthday! My four year old daughter has to have a certain diet, so here are a few recipes she loves. I hope they will be of help. When we go to a party I bring one of these for her.

Almond Butter Cookies

1 c. Almond butter
1 egg
pinch of salt
1/2 t. Baking powder
2 T. Maple syrup

Mix all together and form balls. Criss cross each ball with a fork. Bake at 350 for 10 min.

Four Tea Cakes

1/2 c. Cashew flour (from Trader Joes or grind cashews in a coffee grinder)
1 T. Brown rice flour
1/8 t. Salt
1/4 t. Baking powder
mix together then add:

1 egg
3 T. Grapeseed oil
2 heaping t's of 100 percent jam or maple syrup

Put onto 4 muffin cups. Put 5 blueberries or 5 raspberries on top of each. Bake at 400 for 18 min.

Apple Tartin

Peel and slice 2 big granny smith apples. Saute in a very hot pan with a little oil. I use a copper skillet which caramelizes

the apples beautifully, which is what you want. You put those into a small pie plate and then top with this:

1/2 c. Cashew or almond flour ( if almond I buy slivered
blanched almonds and grind in the coffee grinder)
1 t. Baking powder
pinch salt
3 T. Grapeseed oil
1 egg
1 t. Vanilla

Mix and pour over apples. Bake at 350 for 20 min.

Rough Berry Tart

3/4 c. spelt flour
1/8 t. Salt
Mix in a food processor and add:

5 T. Frozen olive oil or cold butter
Blend until crumbs and add 1 T. Ice water or a little more until a dough is formed. Roll out to a circle. Next mix all this together in a bowl and pour into the middle of the crust.

1 lb of berries of choice
1/2 t. Grapefruit zest
1/8 gmail salt
2-4 T. 100 percent Fruit jam

Fold up crust over fruit leaving the middle open. Bake at 400 for 25 min

www.elanaspantry.com has great almond flour recipes.  Most are super easy and use Agave as the sweetener.  I also have the cook book which I like.
