I am so bored.

Could you tell me what you eat in a typical day?

The same old, same old. What gets me in trouble is when I run out of allowed food and start opening refrigerator and pantry doors looking for something to eat. That is when I slip.
I've been eating zucchini muffins for comfort food for months. I don't seem to get tired of them. Meat helps a lot, too. I never gave up yogurt, so it is my daily staple, too. Although now I am thinking about giving it up for a few weeks to see if there is a difference. I also eat at least one huge salad a day, most days two. My salad is plain lettuce, cucumbers, sea salt, and olive oil. I do eat backed sweet potato with lots of butter occasionally. Like for PorkChop, any starch is not good for me. I dropped rice cakes for that reason. However, sometimes I allow starch.
I also make kale and chard smoothies. I know they are on list 2, but I am totally fine with both. I can handle celery, onion when they are cooked, but not raw. I sauté kale or swiss chard or both with olive oil. The dish is delicious. I feel energy after eating it. This week I introduced cooked green pepper. When I try a new food, I try it cooked first. It reduces severity of reaction if there is such. I tried sautéed spinach today, I think it was okay.
Did you ask Matia to let you try things on list 2?

I have an omelet with 2 eggs, brocoli and zucchini for breakfeast.  Or spelt toast with butter.
I have a huge salad for lunch with allowed veges and sea salt....not olive oil as I don't like it.
For dinner I have meat, baked potatoe and lots of lightly steamed veges.
Its really tough at first, but list one doesn't last forever.

So--totally not that healthy, but tempura is awesome on list 1, with hella mayo.  I made a batter of spelt flour, egg and a little water, and then I dipped veggies in it, fried it, and ate it with mayo (the recipe is on the site).  it is SO satisfying.  There is also an INCREDIBLE recipe on here for clam pie, which is list 1 appropriate.  I hate seafood, so I sub in chicken.  This pie is so good, it tastes like dessert.
Natalie L posted some really good stuff for list 1, just put it into the search engine.

I also make tortillas and put fried veggies or steamed veggies with protein in them.
1.5 c of spelt flour
2 tbsp oil or butter
1/2 c of spring water

I recommend ordering flour from cayuga farms. The difference is huge.

I second that, cayuga farms are awesome!

You can seriously eat that food and get better?  Why am I killing myself then.  I want fried food.....I figured that would not be allowed!

Would someone mind posting the recipe for zucchini muffins?  They sound like a great snack (much better than the cold steamed broccoli I had last night) and I can't seem to find the recipe anywhere on the site.

Thanks!

Hi, I'm new to the forum, this is what I've been eating each week for the past 4 months, at first it seemed boring but I'm pretty happy eating this every week now.

Shelby-
Don't go too crazy, but you can eat fried food--provided the oils are ok.
