Hey everyone my B-day is in a couple days. I am on stage one but want to try to make something to eat that is more interesting than my normal. Anyone have any good ideas? The spelt zuccinni bread I saw in Recipes looked good. :) let me know if there are any other good ideas out there!

Hope whatever you eat on the day you have a really good day. Am literally just about to have a go at the zuchinni muffins so will let you know how they go, have been otld they are good especially toasted!
Have you tried a stir fry? Very finely shredded cabbage, zuchinni and brocilli cut into really small florets, fry in olive oil with garlic powder a little salt and some dried basil then add in cooked chicken stips and some precooked brown rice - yummy.

I think I need to experiment a bit with the ingredients but all in all not too bad...think I'll cut down a little on the baking soda (we call it bicarbonate of soda in the UK, could be it's stronger?!).

I remember the days of list one. Finding something to enjoy can be tough. And my favourite thing in the world is birthday cake, so I find birthdays hard.
The zuccini muffins are very good. Keep in mind that spelt flour acts a bit differently than regular flour. The "toothpick test" isn't very effective for spelt flour recipes. My experience is if I poke them with a toothpick and the toothpick comes out clean that I've over done them. It's better to press on the muffins with a finger and see if they "bounce back." I sometimes find adding a bit more water than the recipe calls for helps make them a little more moist.
One of my favourite treats is mashed califlower. Just like mashed potatoes, but I think better (and way better for you). If you're alowed butter at this point, a little butter is a nice touch too.
Also, I don't know where you live, but if its suitable weather for barbecuing, you can cut up some zuccini, broccoli and califlower, brush them with olive oil, and grill on the barbecue (I usually use one of those disposable aluminum trays on the grill for convenience) I've always thought this was yummy!
Lastly, fried cabbage. Cut it up and fry it in a bit of olive oil...
So those are all veggie "treats".... other than the suggestions above I used to put a bit of butter on a rice cake and this felt like a major treat... :)
