Does anyone know if we can use extra light (in taste) olive oil?  It has a higher smoke point than regular olive oil so it's better for sauteing, roasting, etc.  It doesn't say anything about being extra virgin on the label, but I thought I'd check with other authorities before behaving adventurously...
