I have recently gone gluten and egg free and I am not used to cooking this way. Does anyone have any good bread recipies they can add to the list. I did see one rice one but it says it's very crubly I am a great cook but I have never cooked with out gluten. This is going to be a tricky one when you take the gluten out you seem to need the egg I don't know how it's going to work with out it :/

I did the IGG delayed allergy
I did the IGG delayed allergy blood testing though my Dr's office. It turned out that a lot of the foods I was eating tested high .Delayed food Allergies/Sensitivities .This type of allergy, often called 'food sensitivities', does not involve IgE antibodies and the release of histamine which cause very obvious symptoms soon after the ingestion of a food. Instead they are the result of IgG antibodies becoming sensitized to certain foods. IgG antibodies don't cause the release of histamine but they do release other immune chemicals designed to inactivate or destroy invaders in the body. These chemicals can cause damage and resulting inflammation to your own body tissues in the process. As a result, they too can cause symptoms, especially if you develop sensitivities to a number of different foods. Symptoms from food sensitivities may appear up to 3 days after the offending food was ingested and last for weeks afterwards. Symptoms are wide ranging and can affect multiple body systems.
I was never tested for celiac disease because i didn't want to drink the stuff involved with taking the test. Before I started with Matia I seemed to be getting more sensitive to foods and I was sick of the guessing game with trying out foods to see what happens.The test was rather expensive but I do feel it helped. I went on L-glutamine and I think it did help me heal my leaky gut. They say to be on it 2 weeks on one month off for 5 months i didn't do it like that so I don't know how well mine healed but I do know i had some improvement. I don't know if it's a good IC supplement if it causes inflamation or not.So now I just try to avoid the foods high on my allergy list.

Do you need a special dr or lab for this test or will any PCP/lab do? I have wanted to have this done but didn't know who I could find who would believe in the test and order it for me. How much did it cost?

there are a few labs that do it. Most Dr's can order it for you. I know holisticnurse.com has one you can order for 355 through immuno labs that includes a reading explanation and 115 foods. If you order it yourself you must go to a community hospital lab or lab that draws blood (draw fees are approximately $20 to $25). I would get one from a dr though because then you can pick what foods you want to test. IT does get a bit pricey, I think I paid way too much for mine so get some prices before you do it. They took a vial of blood and I had them do all the foods I was eating and some foods I would like to eat.It may answer some reasons why your reacting certain ways. I know that constantly eating foods we are sensitive can damage the gut leading to LGS. Wheat was a bit one I wanted to test.I don't think these are real allergies as they will go away once the body is restored but it is good to know. I think it helps speed up the process if you can do it. I didn't have a dr at the time so I went to a nutritionist that had an MD.
tortillas
I make a lot of tortillas instead of bread just to mix it up. I use the spelt tortilla recipe that is on the website but what you might try is to use rice flour instead. Other than the flour there is just oil and water, no eggs. The rice flour may make it a bit crumbly though but it's worth a shot!

Thanks lexy spelt is not the same chemical make up and it just ends up all crumbs. I read about one person using flax in place of eggs but I know I am not ready for that yet. I tried a batch the other day and it all just fell apart plus it was a new flour I don't think i tolerated it. I am going to try rice and potato next and see what I can come up with. If I could use the egg it would all work out fine but I need to fine because spelt has gluten and that makes it stick together. When you have no gluten you need something to bind it all. Sometimes they use gargum but I don't think i can do that. I am sure I will find something that works.

I make muffins with brown rice flour by Bob's red mill. could you use melted butter, water, and/or plain yogurt to hold it all together?
I know my spelt bread just has flour, water and salt in it.
