I need some advice about going off grains. My IC pain needs to go done more and I am thinking of going off grains (spelt, kamut) for a while. How long does one need to be off grains to notice a difference? Also, what do you eat in a typical day? I had been eating a lot of spelt toast and noodles. I especially need breakfast and snack ideas. Thanks.
Grains
I quit eating grains for one year a couple of years ago. Matia did not want me to quit grains at the time, but I did it anyhow. I did not notice a difference in symptoms, but my blood test for candida said that the yeast was down to the normal levels. I had not had a normal reading before. I have since started eating some grains again because there aren't many foods that I tolerate and my weight was down. I mostly ate a lot of potatoes when I was off the grains. I ate fish and red potatoes for breakfast. Red potatoes are lower in starch. You could also use any other meat. For lunch I ate a large salad with a protein on top and sometimes ate some potato chips or more potatoes. For dinner I ate meat and potatoes and salad. If you tolerate some of the veggies on the list, you could eat them. For bedtime snacks I ate more red potatoes. I got pretty sick of potatoes, but it helped to accomplish my goal of being off the grains. My bladder has always flared on whole grains, so I do better on the unbleached regular flour even though it isn't the best thing to be eating. I hate to say it, but I snacked on potato chips. One has to eat something and I have a hard time tolerating most vegetables. Maybe someone else has some better ideas, but that is how I went about it. Try it and see how you do. I would think you would need to be off grains for several months if you are going to see a difference. Good luck!

I was off grains for a while, actually, I go off grains sometimes, but I do it when I feel like I am eating way too many rice crackers and want to quit that habit. Matia had told me to try it for two weeks to see if there was a difference in my symtoms. I enjoyed steamed spinach (a bowl) and an omelette for breakfast. Salad with tuna, salmon or chicken for lunch, etc. I also didn't eat potatoes during this time, basically when I do this, I cut out the carbs.I find that when I cut out the carbs, it is easier to eat more veggies, because I never stuff myself with rice or crackers.Try salt called "fleur de sel", the grains are big and crunchy and makes meals more tasty and special.
