This only my 2nd time writing on this forum. I wanted to encourage you all to keep up the fight to get better. I have been with Dr. M for year and half now, and still am on list 2. For me the hardest thing about being sick is not being able to eat the foods I loved so much, but thankfully the Lord has shown me how to be creative and still make the yummy foods. I find a lot of my ideas on foodgawker.com believe it or not if you want to try there for some ideas. Here's a few list 2 recipes, that I love and my husband loves.
Crispy Golden Garlic Fries
3 medium red potatoes sliced in 1/4" strips
3 tablespoons olive oil
1 teaspoon garlic powder
Toss all in a medium bowl. Cover with plastic wrap and microwave for three minutes. Tossing half way through. (The potatoes should be slightly cooked)
Add: 1 teaspoon salt
1 tablespoon rice flour
Toss all together in bowl. Pour the fries on a baking tray. I added some cheese to the top of these and then baked them, and it really made them delicious! Bake at 375 oven for 20-30 minutes or just until they are golden on the bottom. My husband loves these fries so much I barely get any ha!
Scrumpous Stuffed Chicken Thighs
5 boneless skinless chicken thighs
Mozzeralla
Yellow bellpepper
Spinach
I just put a slice of each of these three items in the middle of my chicken and roll them. I secure them with a tooth pick or several tooth picks.
Salt them well on the outside and than roll in rice flour.
Turn oven on at 375 degrees. Brown the stuffed chicken in a cast iron skillet with olive oil. Turn the chicken once and wait for a few minutes than place the whole pan in the oven for 10 minutes. This meal is so delicious! Another meal my husband loves. You could win a food network contest with this meal ha!
The Best Refried Rice
1/2 onion
1/2 cup cabbage
Saute at medium in olive oil till the onlon is turning golden. Stir quite often to avoid burning. Season with a little salt while cooking.
Once done your going to push the sauted onion and cabbage to the side. And fry 1 egg till completely cooked (make sure to break the yoke). Season egg with a little salt. Than once cooked combine all together.
1 cup cooked brown rice
Add to mixture constantly stiring.( Add more olive oil if needed.) Season again with salt and garlic powder to taste.
I hope you enjoy these recipes as much as I did. You don't have to suffer being on list 1 or 2 you just got to be up for the challenge and be creative. I kind of think of it as if I'm on a foodnetwork cooking show, and they give me only these few ingredients to make something delicious! God bless my friends!

I am going to try all of these recipes! I will make the potatoes for dad, since I can't have those, and the rest of the recipes minus the cheese, but maybe I could sub in some pesto in place of the
cheese. I love you dear!
