Mashed Broccoli - ok, hang in there with me folks. I developed this because i have such a hard  time eating large quantities of vegs.  This will sound and look terrible but: a) it taste good with almost anything inlcuding steak and eggs b)it reheats really well either in the microwave or as i do, in a skillit in the morning.  Even my sister eats it now and she's not on this diet. Makes 8 10oz servings

4 10 oz bags chopped onion

4 10 oz bags chopped broccolli

2 10 oz bags spinach

2tsp salt (or adjust to taste)

1.5 oz cheese (optional. i only do this about 25% of the time)

1 tablespoon oil

Steam broccoli until very tender

At same time, put oil in large pot on medium heat. I use a enamel coated cast iron pot.  Put all the onions and spinach in with 1 tsp salt and cover. Cook, stirring occassionally, until very tender and liquid is mostly gone. Usually about 20-30min for me.

Put half this mixture, half of broccoli, 1/2 tsp salt, and half of cheese into food processor and puree until smooth. Repeat with other half of ingredients.

Also I love the following as it also reheats well, That's if you can manage to save any -

Meatza

3# lamb (you can use beef but it's not nearly as good as lamb  to me)

2tsp salt

2tsp garlic powder or 5 cloves minced garlic

1/2 tsp pepper

any additional seasoning you can tolerate or would go well with your toppings

pizza toppings - sometimes i just use carmelized onions and peppers, sometimes tomato sauce and cheese.  It's good with just about anything.

Preheat oven to 425. Combine all crust ingredients then squish into large rectangular pan so it's about 1/4" thick or so. cook for 10 min.  Add toppings.  Cook for another 8-10 min or until it looks done.  I cut this into 8 pieces which is around 3-4 oz each.

Other interesting items i've run across:

Hash Browns - Cascadian farms makes a hash browns that have potatoes only in them.  I thaw these out and pan fry them in a tablespoon of olive oil and 1/4 tsp salt, usually only on weekends.   I purchase them at better health.

Dried Blueberries - nuts.com and bellaviva orchards have dried blueberries without sugar or oil.

Freeze dried vegetables - nuts.com also has freeze dried, without chemcials or any other ingredients, broccoli, carrots, blueberries and spinach. I use these when traveling along with some nut butter.

Grain and yeast free pizza and bread: Against the grain is brand that makes pizza and rolls that only have like 5 ingredients and consist mostly of mozerrella and tapioca flour, so this only works if you are not sensitive to tapioca.  And matia said even if you are not sensitive, it should only be consumed occassionally at this stage.  I use it for stuff like cookouts so i can have a roll with my hamburger or whatever. The rolls aren't very good at room temperature but are chewy and very delicious when microwaved for 10-15sec.

whoops, for the mashed broccoli, all the vegetables are frozen 12oz bags not 10oz.

also, occassionally after the onions are tender enough, there is too much liquid. As is the case with mashed cauliflower, too much liquid is not your friend. When this happens, i just take the lid off,  turn up the heat, and cook the liquid off.  Doesn't seem to work as well when i just drain it.

My friend said i should also post this one because it's so freakin good, but i think most people know this already, it's like posting a recipe for salad, but it is a good list one if you don't know it.
Creamed Cabbage
i take half a head of green cabbage, cut it into bulky slices.  Add either 1 tablespoon of melted butter or 2 tablespoons of whipping cream, 1/4tsp salt, mix. Put in either a cast iron skillet that can go in the oven or aluminum foil at 425 for 40 min or so.

Broccoli dish sounds great, but dr matia brizman told me no dried fruits bc of their very high sugar and mold content

interesting, i'll have to ask her about that. I wonder if there is also a problem with freeze dried.  the only dried fruit i get are the organic blueberries and I eat very small quantities when traveling, but i don't want to do anything to screw myself up, that's for sure!

fyi, i forgot to ask her about freeze dried, but I did ask about the dried blueberries.  She did mention something about sugar and mold content in dried fruit, but said blueberries in small quantities are probably ok, although fresh of course is always better.  She said it depends on the fruit, that something like dates is going to be very bad, etc.

Tapioca = corn= GMO, isn't it, unless it is organic.

I don't understand this. Tapioca is not corn. Tapioca is made from cassava root.
 Although I am sure tapioca has it's own demons, and I"m sure there is GMO and versions and non GMO versions.  It's on occassional item for me only, just like rice.  I"m not in favor of eating any grains, but rice is the least of the evils etc. In this case, i cannot have gluten or spelt etc., so this is a bread alternative that is yeast, sugar, and gluten free for the odd occassion  I need something like this.

I would think freeze dried is different from other dried fruit like apricots but not sure!

I would agree about the dried blueberries being safe in small quantities but worth asking Dr. Brizman to be safe! THanks for posting the recipes. Very thoughtful! I tried the against the grain pizza this past weekend and it was AMAZING. Best gluten free pizza i've ever had.  My boyfriend even like it!

Sorry for confusion, I thought tapioca is made from corn, but apparently it is not. This one is new to me, even after a while in treatment.
I apologize. So many things to learn.
