I'm from UK and we don't have the varieties of squashes that are available in US. I was intrigued when I heard some of u talking about 'spaghetti squash' it sounded very exotic to me and I was excited to find one in a food hall in a large department store in central London earlier this week. Now I've got it, can anyone tell me how to cook it?

it is for list 3 from what Matia tells me . I cut mine in half and pressure cook it. You can steam it but it will take about 45 min. I scoop out the insides the seeds . I eat it just as if it were spagetti. I add my meat to it and put on garlic mix my green veggies in it. I try to limit this because it is very high in vit A and Matia told me personally to take it easy. I seem to tolerate it in small amounts.

Thanks Nicole for instant reply! Ah! I just looked at the Diet section here, yes its List 3, oh well I will try it, cautiously, since I've bought it. What other squashes are available in US? We only have butternut squashes here in the grocery stores, I used to love gem squashes when I lived in S.Africa.

I don't have a pressue cooker so I just put it whole in the oven at about 350 for about 1 hour and then cut it in half and scoop it out.

Thanks for asking - I was disappointed really - it was quite bitter and not in a nice way like artichoke which I love, so I won't be adding it. I am making good progress thanks. How are u doing?
The only squashes that are
The only squashes that are not on list 3 are summer squash those long ones that are yellow same as zuccini. I am excited that the season for growing is about to start in another month and I will be growing my own veggies and herbs.
My pressure cooker is my favorite btw if you don't have one I really suggest investing in one when you can. I use mine for a lot of things and it makes it all so tender and very fast to cook.

Nicole, I have a question about your last post. It said, "The only squashes that are not on list 3 are summer squash those long ones that are yellow same as zuccini." Are these the same yellow squash that are on list 1? Thanks.
