Trying new food- feeling freaked out

I've been on list 1 since May without spelt since I had been gluten free for a while. I was also on a very limited diet(none of the top major allergens) for almost a year before treatment because of my baby's issues through breastmilk. So.....food and me have had a very difficult relationship since March 2010.

 

Anyway- Matia keeps telling me I can move up when I "stabilize" but I never have a really good span. I don't really even know what "Stabilize" means.So the past week or so has been ok- no severely bad days. Today is on the better side and I am so darn hungry and a bit bored so I decided to try provolone cheese. it tasted great but now I feel all weird about it like I am messing myself up or something. I want to be ok with this choice- not regretful or worried. If I react, I react right?

 

ANy wise words to help me through this?

oh lord - this is ME! Get super-anxiuos about trying anything, and then analyse every twinge afterwards. No advice, but will be watching!!

I was terrified for the first two years I had IC.....so terrified that I lost almost 50lbs.  I am no longer terrified.  I try a small amount of a new food and wait.....even if I do react its never as bad as I imagined.  I might have some pain....but not usually, I usually just get more frequency and then it passes in a couple of hours.  Then I wait a while and try it again.  The only thing I can't do is dairy.  I try not to eat too many grains just because I know there not good for you.  When Matia told me to try tomatoes I was so excited because it had been over two years.....and guess what.....no problem at all.  Now I can even have spaghetti and very mild chili again!

Nice, I can't wait to eat tomatoes again. I get scared to try new stuff too. But I have tried Mozarella cheese sticks and I didn't get any symptoms after. YaY! I'm excited to add something new to the diet.

Ok- I did get worse later last night but I have been getting worse almost every night. Sigh... so do I try it again and risk getting worse? I think even if I stayed a a steady worse level it would almost be better than up and down because i could tell what the heck was bothering me.. Not sure though.
Today is better so if it did bug me it was short lived.
 
I'm also wondering if I am drinking enough water. As soon as it stops being hot outside, I forget to drink.
 
How much do you all drink per day?

Hey Deir-
Actually when I'm flaring, I drink a ton of water.  It helps "dilute the nasties" as my friend NatalieL says (she's from icama). It sucks because then I have to pee every few minutes, but it usually helps them abate.
I too drink 2 liters a day, sometimes more.  I'm super thirsty tho, so it helps.
