I've tried this fairly simple recipe a few times now and it's quite tasty, I think. Might give people something new to try anyway.
I get 2 courgettes/zucchinis and use a peeler to shave strips off of them, skin and all, discard both end bits.
Sauté them in a frying pan with olive oil or butter until they start to go golden in places and catch a little.
Add some cooked chicken in, and carry on stirring it all around occasionally. Some bits should be quite brown now which really brings out the flavour and caramelises it a bit.
Now crack 3 eggs in there and whizz it all around, scrambling the eggs into the mix. Let the eggs catch a little and go golden brown in places.
Eat!
I think it's pretty tasty and is really quick too. Add some salt in too if you like, and the amounts can be changed, I just do it however I fancy every time and it comes out ok!
It sort of reminds me of Pad Thai which I loved before I got this.

Thanks so much for the recipe!! I too enjoy pad thai so I will be making this dish in the near futur. I'm also in the process of making zucchini for dinner tonight. I sliced them thinnly and I dip them in egg and then spelt flour. I purchased a new product called acti-fry and I can fry them with a tiny spoon of olive oil. They are so crispy. I've also made french fries and they are so delicious and crunchy. Anyway thanks again for recipe and please post any other recipes you may have.
