Rita's Asparagus/Broccoli Chicken Soup
Ingredients
3 c
chopped asparagus 2 c
chopped broccoli 2
stalks celery- chopped 1⁄2 c
chopped onion ( ( if tolerated)) 1
small can chicken broth 2
chicken breast halves (cut into chunks-sprinkle w/salt) 1⁄2 t
salt 1⁄4 t
basil 1⁄8 t
pepper ( ( if tolerated)) 1⁄8 t
garlic powder 2 T
olive oilInstructions
Place asparagus and broccoli in just enough water to cover. Cook until tender. Pour everything( water included) into a blender and blend until smooth. Put back into saucepan. While veggies are cooking, sauté chicken in oil, add onions and celery and cook until tender. Add this to the of vegetables, with broth, salt, basil, pepper, and garlic powder.
