I'm wondering if anyone has a recipe for making yeast-less spelt or kamut (or any other approved grain) bread in the bread machine? I prefer spelt, though, only because it's more readily available at the store.
If you could include the recipe as well as the process, that'd be great (I'm a bread machine newbie, so I'll need specifics on what type of setting to put it on).

I'll answer my own question because I found and tested a great recipe that resulted in delicious, nutty bread that is actually a little fluffier than the store-bought french meadow brand.
Mix dry ingredients. Then add egg, mix in. Finally, add milk and mix in until you get a batter/dough.
Pop in the bread maker on bake-only setting for 40 minutes.
Voila!

Thank you for sharing this recipe. I tried a similar recipe in the past and ended up with more of a crumbly, cake-like consistency instead of bread. Not sure if it's the eggs in it. It tasted really good but too soft to spread butter or anything. I was just curious if the bread machine helps with the texture?

I definitely had great success with achieving a bread-like consistency with the bread machine. It was not as dense/firm as the French Meadow kind, but it deifnitely held up to butter and even multiple slices of avocado. It was such a great investment (about $100) because the French Meadows bread runs about $7/loaf, and making it myself came out to about $2.
Recipe change note: I should mention that everytime I make the bread using the recipe above, I get a very soggy mix, so I end up adding about 1/2-3/4 cup more flour -- so please adjust in your recipe as necessary!

Shadiahs for this recipe. I am going to try it with rice flour in my bread machine and see if it will work. Rice bread is $7 a loaf, too! It would be great to have such a fast and easy recipe.
