diet question

Hi Everyone. I have been moved to list 2.Hooray! It has been 3 weeks & I have tolerated everything I have tried:) My question is Matia has said on a few occaisions that the diet list is a road map and not a complete list. I have tried both mozzarella & prov cheese. numerous times & am fine. what are some more mild cheeses that I can try???? any advice or ideas for list 2 would be greatly appreciated.

I made a steak quesadilla for dinner tonight with sauteed red & yellow pepper, onions & mozz cheese. filled a soft tortilla shell (i think it was food for life rice tortilla) folded in half then put it in a skillet to melt & brown on both sides it was awesome!!!

Hi Amy Barbara Lucky you! Woo hoo. I'm have my first appointment with Dr B in a week and a half so not sure what list I'm on so sticking to 1 until then BUT I know my cheeses haha and can tell you that some good mild cheese are swiss cheeses like Jarlsberg and Emmenthal. 
Another receipe I recently discovered which can be adapted between lists are fish and zucchini fritters! Just throw some cooked fish, grated zucchini, an egg and some yeast/gluten free bread crumbs (you can even make the crumbs yourself by putting yeast/gluten free bread slices through a blender) into a food processor or blender and pulse until the mixture is blended but still a little chunky. Then spoon it onto a frying pan into little fritters and fry away until cooked! Add some garlic salt to season! Or if you're on to list 2 as you are you can even throw some onion into the mix.
