I have been dabbling in sprouted grain products for my family for the past two years.

Here is an excerpt on sprouted grains at Shiloh Farms. They have sprouted flours and cereals. Better digestion, more nutrients released, longer shelf life, sprouted flour does NOT go rancid. You can also sprout your own flour, but I am not quite ready for that!:

"The grains used to make this flour has been sprouted to increase the bioavailability of nutrients that lay dormant in whole grain. When whole grains are sprouted properly the germ cell is consumed by the endosperm and is no longer in a state that can become rancid. When the grain is sprouted, gently dried and milled under measured conditions, it becomes a stable,  easy-to-digest whole grain flour allowing it to maintain its freshness and shelf life much, much longer than unsprouted flour.    Enzymes, vitamins and minerals are released; starches and proteins are naturally reduced into the simple sugars, that are more easily absorbed into your body to provide your need for energy.

The Result:  Essential Eating Sprouted Grain Flours digests as a vegetable.  Good digestion is key to good health. "

Here is a company that imports their almonds from Italy (sad, I know) because the steam pasturization process used on organic, "raw" almonds in the US kills alot of nutrients and ups the amounts of acrylamide in the nuts (toxic!). They have raw almonds, and also sprouted and gently dried (150 degrees) which make a great snack when appropriate in treatment (I am not there yet! but plan to buy for my family)
