Hi Everyone! I have been encouraging my daughter with my method for cooking since there is quite a bit required on our diet. I thought I would share it with you all that it might be of some help. I shop on Saurday, and I do the bulk of my cooking on Monday. Here is what I do. I start a big batch of brown rice in the rice cooker. I put on a roast chicken in the oven. If I bought a beef roast, I will put that on in the crock pot as well. (I shared both of these recipes some time ago.) Then I start my veggies. I saute up the broccoli with some, olive oil, garlic powde,r and salt, when that is done I put it in a bowl. Then I saute up some cabbage or kale the same way, and put that in a bowl. I then do some asparagus likewise, and on into a bowl. If I have brussel sprouts, I roast them in olive oil, garlic powder, and salt at 375 until lightly browned, about 20 minutes or so. I roast the same with cauliflower. I usually have about 5 or 6 bowls of veggies all cooked. I like my veggies crisp cooked. I also make a pesto in the food processor. And I make turkey sausages ( a recipe I shared before as well).
Once the chicken is done, I let it cool and take the meat off it and put that in a bowl. Then I use the rest for a chicken broth (a recipe I also shared some time ago) and get that going. By the time the chicken broth is done, the roast beef is done. The rice is also done. And if I am good, I put some eggs on to boil, so that I can have hard boiled eggs during the week. And if I am really good, I also chop up some salad fixings and have those all nice and chilled. But I usually just do the veggies, rice, pesto, and meats for the week.
Then during the week, I make Mac N Pesto ( a recipe I also shared before), Rice Bowls, Stir Fried Rice with Veggies and Meat, Omelets with veggies and meat, Paninis with Ener G bread and the veggies and meat, Pizza with veggies and chicken, Salads, and Soups. I still have to cook some other dinners as I don't have enough for the entire week, but this does take a load off. And it makes lunches and breakfasts so much more easier. Sometimes I make two chickens and two roasts if I want more meat. And if my husband is BBQing over the weekend, I will wrap some frozen fish in wax paper, then tin foil, and have him cook that for me on the grill. I'll also have him grill me some chicken breasts, which I can again use during the week. Sunday he made some steak, so I "squirreled" some away for the week, and I put it in my Mac N Pesto, and today I will use it in a stir fry. So good!

it is a help to you. :) I was in a bit of a hurry writing it yesterday, and I forgot to mention that I also write out my meals for the week and keep them posted at my desk. I know this sounds incredibly organized, which I am really the opposite, but I've learned to change my ways to make this diet work. I find that having my meals written out under breakfast, lunch, and dinner gives me a sense of peace for the week. I will look on the list and decide what I want for that particular meal, and since so much is cooked already on Monday, that makes the week go a lot easier in the cooking department. It's especially helpful when you're having a rough day and can't think straight. My daughter was struggling at first with the diet, and then what to cook every day. Now she' s writing her meals out, and it's a lot easier. I find that keeping a grocery list in my cell phone reminds me what to buy as well.
Another added note, when I cook the veggies to saute them, I use the same big skillet over and over. So I only have one pan to clean at the end of it all, besides the roasting pan l. I also put my veggies in these colorful bowls that I have, slip a see through plate on the top, and then I stack them in my fridge. That way I don't have to use plastic wrap, and I can see what veggies are in each bowl when I want to use them.
My favorite snack is still popped wild rice (which I shared the recipe some time back). My daughter came by recently to borrow some wild rice because she liked it so much. I also like to make guacamole with rice crackers, or rice cakes with guacamole and some chicken on top. A rice cracker with a slice of cucumber and a small piece of cheese is really good, too. Or some tuna mixed with avocado over a rice cracker is nice.
If I make a salad, I try to incorporate these ingredients which makes the salad so much more tastier: thinly sliced cooked meat of some kind, avocado sliced, a little sauteed onion, hard boiled egg sliced, and some mozarella cheese diced. If you can tolerate these and put them over the top of a salad mixed with the olive oil, salt, and garlic powder dressing, it's absolutely delicious. It's also good with some popped rice over, too! Really a wonderful meal in itself.
I try to make delicious food and serve it on my prettiest plates, then I don't feel deprived. I feel a bit pampered. I have felt miserable sometimes when making my "Monday Magic", but I just muddle through and get it done. I'm always glad I did the rest of the week.

sweet of you, Soniafa! Deir, you are right, I try to focus on what I can eat and to be so thankful for that. My daughter and I both love to cook, so when she began to see Dr. B, too, I told her that we are the Iron Chefs, and these are the ingredients we get to work with to make the most tastiest food we possibly can. We always check in with each other to see what one another's making for the day. :)
