Camping food??

Hello everyone,

I need your creativity! I'm going on a three-day canoe camping trip. This is the sort of trip where you need to carry your food on your back and there's no refridgeration and minimal prep equipment (I can boil water over a small camp stove but that's pretty much it).  In my former life I would have brought freeze-dried or boil-in-a-bag-type food for a trip like this, but now I'm on Dr. Brizman's List 3 diet.  Does anyone have ideas on lunch and dinner meals I can bring that hopefully would be easy to prepare, doesn't weigh much and need not be refridgerated for this trip?  
 
Help! Any ideas would be appreciated.

I camp a lot. I bring packs of tuna and chicken (don't get cans, they weigh too much). I also bring spelt wraps, cucumber, boiled eggs, cape cod potato chips, almonds, spelt pretzels, rice cakes, almond butter, and apples. I do not drink spring water because we get it from water sources but we put chemicals in it to clean it.... Not worth getting sick so I take my chances. But that is if you are going to hike, not just camp. Hope that helps.

This is really helpful. One question - How do you pack up your tuna and chicken? Do you bring it raw and cook in while camping, or pre-cooked?

cooked will last longer.

I buy it on the packets so I don't cook it, it's already ready in the packet. Your health food store should have them. :)

How do you get enough veggies during the time you re camping? I passed on a great backpacking trip because there is no way to bring the vol of veggies that we are supposed to eat.

I didn't. But we do Appalachian trail hiking so we hiked into towns a good bit. I would always order salads and buy veggies at a grocery store. My bladder hasn't hurt in 10 months and nothing that I did on the hiking trips made it worse. I wouldn't have gone if I didn't feel like my body could handle change for a few days :)

LeeLee, what a great news about your bladder. How is your muscle pain? I hope it went away, too.
