Question Regarding Bread Ingredients...

Hi Ladies,

 I stumbled upon a company called Against the Grain that has some wonderfully delicious and healthy option for us. I believe they are perfectly safe (with the exception of two of their breads which contain coconut oil) but my question is......... their main ingredient is tapioca starch. What list is this on? I am on the end of list 3 so before I stocked my freezer full of this yummy stuff I wanted to see where tapioca falls.

 I have emailed Dr.B but haven't heard back yet. Your input is greatly appreciated and I will let you know what she says when she answers me.

I think it's individual. I am on list 2 but was allowed the brown rice tortillas which have tapioca. I don't notice if they impact my symptoms since I generally feel my bladder most of the time anyway but I don't feel worse, put it that way. I would wait to hear back from her but I think end list 3 you might get the okay. Please share her answer!

I agree with Sam. I think probably on an individual basis, but Dr. B just recently told me to try A baking mix, which has tapioca starch in it as well. In the beginning I had asked about it, and she had said was not okay. But later on, and maybe in smaller quantities, or in baked goods it is considered okay.

While we're on bread I have a question. Does anyone know whether the reason for avoiding bread and yeast is to encourage good bacteria in the gut (I know that yeast and sugar and wheat can encourage candida bacteria in the gut which isn't good for your immune system) etc so as to make the body heal faster and in doing so also help the IC clear up or is it more of a food sensitivity thing in the same way that if you still have a raw wound on your hand and you were to touch certain things like acidic juices or salt it irritates the wound?

Hi Ladies,
   The answer I got from Dr.B is that tapioca is iffy for us but because of where I am on my food list, I should go ahead and try it. I sure hope it's not an issue because this bread is out of this world;) If you are ok with tapioca, these products are really yummy. After a full year of the energ- rice yeast free bread.... I am ready to try something new... ya know?

Thanks Fahlmank! I used to buy the spelt bread from whoel foods, but then the bread company went out of business. So this really helps. Thanks for sharing!

Miss CC-I think it's a little bit of both, but if you have researched as much about gluten and grains as I have, you would see gluten is very damaging to the intestinal wall and creates inflammation in many people (for many people they don't even know it until longterm it creates problems).  Gluten and other grains are not easily digested and can deplete us, not to mention wreaking havoc on the pancreas and blood sugar dance that goes on in our bodies after we eat.  Since our guts are "leaky" the grains and proteins in gluten aren't properly broken down and they leak into our bloodstream creating an inflammatory response by the immune system. Cutting it out helps to calm down the immune system so it can help restore balance and heal inflammation in the body (such as our bladders).  We IC'ers avoid bread to help starve the yeast mainly and some believes that, after our guts are healed, one may go back to consuming those foods in moderation. My plan it to be gluten free for life, even though I know I may tolerate it better as time goes on.  I have altered my lifestyle enough to where I do not need it, crave it, or want it due to the risk of creating more imablance and inflammation.  Not to say bread causes IC, that is not at all what I mean, but the gluten and yeast exacerbates the gut imbalance and bogs down the immune system, as well as the liver, spikes insulin and impedes digestion. I think many of us will struggle with the "potential" for yeast overgrowth for many years, although we may be back in balance and symptom free. Eating yeast, to me, seems like not a great idea once I've healed. Breads are also very acidic in the body and since keeping a healthy pH balance is critical for us, I prefer to get my acid from meats and occasional rice and potatoes and balance with loads of veggies, which are alkaline. Hope that is helpful.

Does anyon know what whole grain rice is? I found rice cakes made of it. I wonder if there is gluten.

No, rice is gluten free, so you can eat whole grain rice cakes.  
Has anyone tried the Lundberg rice cakes made with wild rice?  Are these allowed?  I need something new and different.
