Yummy spring rolls

Hi all, just got so sick of salad day after day, I made this today and it was tasty!

I'm list 2, so please alter as needed for your list.  I did not use cliantro as I am not approved to try it yet, but I know from experience that it's incredible here.

 

 

Kale or chard-wrapped spring rolls 


6-8 kale or chard leaves

1 leftover chicken breast, cooked, cut into very thin strips

1/2 small cucumber, cut into very thin strips

1/2 red bell pepper, cut into very thin strips

1/4 red cabbage leaves cut into very thin strips (sub with carrot if cabbage not available)

1/2 avocado, sliced thinly

1/2 box thin Asian rice noodles, cooked and cooled

fresh chopped cilantro (optional)

 

 

Bring a pot of water to a low boil. Before cooking the rice noodles, quickly blanch or steam the kale/chard leaves in the hot water for 2 minutes. Remove, drain and let cool.

Cook the rice noodles according to package direction, usually 2-3 minutes.  Strain, rinse and let cool.

Meanwhile, chop all the veggies and cilantro.

 

Put everything on a plate. 

Fill one side of kale leaf with a small amount of noodles, cilantro and one of each veggie stick. Add a slice of avocado. Roll the kale leaf around the combo trying not to tear the kale.  Wrap and eat!

Clean and simple!

PS-I forgot to add, cooked shrimp would be great in place of chicken here too.

Thanks for this Flygirl!...YUM!..I will be creating these.
It reminded me of lunch out at Thai place last week and enjoying Salad Roll with no seasoning..
Is there any feed back on Rice Wraps being ok for us...you know the kind you buy from Asian stores that are dried and you moisten to use as a salad roll cover?  They seem to be pure rice....
It occurred to me they'd work for some travel...
How about an almond (instead of peanut) sauce for dipping....allowed seasonings of course....

I think the rice wraps should be ok as long as rice is the only ingredient. They aren't brown rice however, so i would only use them as a treat now and then.
Tapioca flour can be problematic for many, I know, so check with M first.
