So, since starting the diet, I've actually gotten reallyl into cooking.
I figured, well, I've been wanting to learn to cook and bake for forever, now I have to make virtually all my own food... now's a good time.
On list one, so the options are limited, but I'm experimenting with different types of baking, broiling etc. just the basics. For most people I guess this is totally unexciting, but I came from the classic American family where the microwave was used far more than the oven :/
So, today I am very excited to be attempting potato chips which actually look super easy. Getting pumped! Gonna put that garlic powder and dried basil all over my chips!

Ohhhh yummy quiche! I made the mashed potato crusted quiche the other day, it was deliciouis, but I would love for the eggs to be fluffier, any advice? I feel like normally one would add milk, but I'm doing list 1 so that's not possible.. .maybe melted butter? Or just whip the eggs a bit more??
The chips were a total burnt failure HA! But I think it's because I added too much oil to the bottom of the pan and let them cook for too long (my oven light was broken, that didn't help...) so I bought parchment paper and am going to try again with a new plan of attack. My dad ( who is retired, so shares all of my mid-day meals) keeps grunting about how I will not succeed at baking potato chips, so I am dead set on success just to shut him up MWHAHAHA!
HE WILL LOVE MY POTATO CHIPS! And when I succeed I will tell you just how I did it :)
