Hi hi,
So, I have been doing list one for about two months now with minor deviations. Have gotten serious about it within the past month. HOWEVER, before I even started the diet, I cut dairy, gluten and soy out of my diet since I had had previous uncertainties with these foods.
When I was tested for allergies my gluten sensitivity was borderline BORDERLINE intolerant. As in, to be classified as borderline intolerant I would have needed to test 13, and I tested 12...
Anyway, I have been doing list 1 without spelt or kamut, but I decided to try the spelt and see how it went.
Perhaps I chose a bad time to add it in since I was about to get my period and was experiencing some discomfort with my IBS and GERD...
I made the zucchini muffins, need to use more zucchini for one thing, but that's besides the point. I couldn't control myself, and ate way too many at once (three muffins first thing out of the oven), I did eat them with a balanced meal grant you. I ate a protein and veggie as well to accompany it (although not enoough to balance out THREE of them).
Over the next two days I continued to eat them. I did balance them with proteins and veggies. Like I said, I was having an IBS flare up and GERD issues before I ate the muffins... BUT the symptoms have gotten worse and I wonder if it's due to the continuous muffin eating.
Sometimes when I ate one I was fine, I feel like it might just be the fact that I over did it, need to limit myself to one muffin at a time and balance it and now eat more than two a day...
I do have a problem with all starches if I don't balance them or if I eat too much of them... but I am still a little worried that this could be a spelt specific problem.
Does anyone here have a gluten sensitivity and or spelt/kamut issue?

Dr. B does not believe in the gluten-IC link (search her blog) however it is possible that some people are sensitive to gluten and thus it can aggrevate some symptoms. This is supposed to resolve in treatment. I personally would keep the spelt intake moderate, since you seemed to tolerate it when you had less of it and your diet is limited right now.
Since most of us have a variation of IBS, there are other similar analogies to the gluten concern. For example, stress does not cause IBS or IC, but aggrevates it. Hormones do not cause IC, but aggrevate the underlying imbalance.
She does not really take stake in food intollerance testing, as she thinks of it as just a snapshot of your health picture and our health is too dynamic. My testing showed a "reaction" to eggs and gluten, but scientists debate what the reaction in these tests really means. Does it mean you have developed antibodies and your body does fine with the food, or does it mean you are having some immune reaction of some significance? The jury is really out and Dr. B does not use this type of testing in developing her treatment protocol. Of course, keep your journal and see what your body tells you!!

i personally do believe in a gluten - bladder relation, i have felt it. In 'the better bladder book' written by a woman who recovered from IC, i read about a study that looked at children that were bedwetting. When gluten was taken out of their diet, they stopped bedwetting.
I feel that in my case gluten contributes to anxiety and painful pinprick hives inside the palms of my hands. I had these for about a year. Until i went gluten free, then they disappeared.
When i eat gluten, i have to 'run' to the toilet, it is very difficult to hold my urine when i have to go. So I excluded gluten for months. Now i sometimes have a small slice of brown, yeast free, bread. Maybe once a week. I can tolerate it.
So if you feel that gluten irritates your system, just cut it out, try a small amount and so on.
Even though dr. B doesn't believe in the gluten connection, she said 'what is true for you is true for you'. Hope this helps.
oh forgot to say, after one
oh forgot to say, after one slice of brown bread last week, i had ONE pinprick hive inside my hand. So much less of a reaction, but still a reaction. With coeliac patients gluten irritates the gut. Maybe for some people gluten irritates the bladder? And can cause other reactions? that is what i believe

I have kept wheat, gluten and dairy out of my diet. As i continue to get better I may add in some sheep cheeses. I don't miss the wheat and gluten and tested for a high sensitivity to it. Dairy (cow's milk always bothered me).
Maybe wait until you are a little more symptom free so you can judge better.

Thanks so much for this information. Each one of these posts was extremely helpful. I'm going to wait until I'm feeling really good to test the spelt again so that any potential symptoms can be easily attributed to the gluten intake. I guess we'll see how it goes!!
