I moved back from France right before I started treatment so I can't help with water choices...  HOWEVER I did start ordering supplements and herbs while I was there and you can get most of what you need from amazon or online shops if you can't find the right herbs/brands in Germany.
My experience was that if I couldn't find the herbs I needed on amazon.fr I could usually get them from amazon.co.uk. Also, the UK shipping was generally MUCH quicker than the French shipping... but France is not nearly as efficient as Germany or the UK in general so I would say, try the German amazon site first and then if you are unlucky go for the UK one. The UK seems to be pretty up to date with the whole supplement/herbal movement so they have most of the stuff you'll need. Also, when you are buying them online you can check the individual companies shipping to you and then go direcly to their sites to see what you can get. Dr. B gives specific brands for the supplements you need, so when you go to the amazon site just type that specific supplement right in. Make sure for the probiotic if you do it this way, that they are going to ship on ice.
I just sent a package that was probably about an ounce and it cost 14 dollars for shipping. You can expect to pay between 10 and 20EUROS extra for shipping I think, depending on how many herbs you're getting sent at one time, it could be more if you are getting several bottles sent. This is for standard shipping. If you need them fast, it will cost more obviously.
I would caution you about customs... I hear German customs are especially strict but even in FRance I had packages get held up for weeks by customs. Hard to say what you should do... I remember my mom had to send me medication when I was living in FRance once, and she said it was medicine on the customs form, so they held it for two weeks before I got it. However, if you don't label it correctly and they find out what it is and they aren't happy about it then you'll never get it.
So again, much better to get what you can from within Europe. It would also be easier to actually bring the herbs into the country travelling then just sending them, so if anyone on the forum is going to be in Europe during your treatment, I would ask them to bring a few bottles from Dr. B and send them to you from within the EU if possible.
Ok, I may have made this seem really annoying and complicated. It was an extra stress for me while I was in France, but it WAS possible. Worse comes to worse, you can always order from a supplement company in the US directly and have it shipped and you'll just have to pay like 20E for shipping. I don't THINK I ever paid more than that...

 I'm in the UK - I find much of what we need can be ordered from amazon or eBay ( check it out properly first of course!!!) or I herb. Here in the UK , you have to pay customs charges on anything over £15 I think it is, so I often order one pot at a time from I herb to avoid extra costs. I don't know what the limit is in Germany but it can add extra expense - sometimes though it is actually  cheaper to buy from the states even with the extra charges !! 
 
We also pay customers charges on anything from Bomamed which also increases the costs - average shipping from Bomamed is between $60-$80 dollars depending on how much you order plus customs etc. it does add up but I think it is well worth the costs. 
 
I can't help with water I'm afraid - I think some people drink Evian but I guess you d need to check with Dr B that this is an ok choice for you.
