Even if you don't have IC I think it would be good to stay with the program. You will have to use gluten free grains I have the same issues right now. I feel that Matia will get to the root of the reason you have gluten sensitivity in the first place and you will not have these problems for ever. I think that it is the same as with IC as it starts with the intestins. It takes 6 months to rid your body of total guten just so you know. Right now the only Gluten free things I seem to tolerate is rice. Potatos bother my bladder. I shop at the gluten free mall online there are a few things I have found. As long as you tolerate eggs gluten free cooking is not that bad and you will get the hang of it.

Sounds like your in a simalr boat as I am in. IF you can do potatos you might be able to get some potato flour to make bread with. You can try some gelatin to replace the egg.
You might try amaranth, tapioca, millet, quinoa and tef flours as well. Most of the other egg replacements we can't do like flax is a great egg replecement but seeds are out. Once you get to a better stage if you find your still needing to be gluten free but can have the seeds that may be an option.  Did you do the IgG testing? I am not so sure how effective those testings are. I think once our intestins are brought back to balance the foods will not be so much of an issue.

I am  not sure about this bread you can see if it works if you want and let us all know. I can't do potato or i would try it.
gelatin (To replace each egg: Dissolve 1 tablespoon unflavored gelatin in 1 tablespoon cold water, then add 2 tablespoons boiling water. Beat vigorously until frothy.)
8 oz potato flour
2 tbs oil
4 teaspoons baking powder get some gluten free kind
2 1/2 egg replacers follow above directions for eggs.
pinch of salt
4 oz water
Put egg white replacer, water and salt in a bowl and whisk vigourously until it stands in stiff peaks.
Sieve together the potato flour and baking powder. Add to the peaked mixture with the rest of the ingredients and beat to a smooth paste.
Put into a well oiled tin and bake at 205C/400F for 35 minutes. Turn out to cool.

I hope it works for you.
eden foods makes quinona pasta if you tolerate that. I herb sells it.
that should give you a few choices there. If you can do the potato you always have chips. YOu might want to invest in a dehydrator to make your own.
Thats about all i have to offer with out knowing your diet.

Toreydo you have celiac disease?  If you do, I strongly recommend avoiding the gluten no matter what.  I am going to be tested for celiac soon.  I have a lot of stomach problems also, esp spasms and acid reflux/indigestion.  what are your stomach issues?I was wondering how you were tested for yeast and food sensitivities?  I am hightly interested in those tests as well but can't seem to find a doc who believes in them and will order them for me.  They are blood tests, right?  how did you get your's done?thanks icnot4me

You could do olive oil
either simmer some garlic chopped very fine or garlic powder.
salt
basil chop it up and then put it all together in a saucer and stab it with the fork. then return it to the fridge to let some more of the flavors release into the oils for at least 30 min. any other herbs you can have you can do the same thing.

For those gluten intolerant, Whole Foods sells some decent Brown Rice tortillas, in the refrigerated section.  The brand is Food for Life, ingredients are brown rice flour, filtered water, tapioca flour, safflower oil, rice bran, vegetable gum and a few other things.  I'm not sure how bad these ingredients are for the IC diet, but there's no sugar!
I scramble eggs and put them in the tortilla with a little avocado.  Not bad, doesn't seem to affect me.

I asked Matia about this exact product!  She said it should be fine for me (I'm on List 3 veggies).  She said sometimes some people can react to the tapioca flour but it would prob be fine, and it was.
