List 3 Foods

Hi all, 

I was recently given the okay to try list 3 foods, the problem is the list seems very vague to me. I have written Matia for clarification but haven't heard back. I know she is busy, but it has been a week and I would love to try some new things, so I thought you all might be able to help. 

1. Hard "mild" cheeses. Anyone know what this includes? I really want to try fresh goat cheese but know this is not "hard," though I think it's mild. What about havarti? Cottage cheese? Feta? Gruyere? haha. so lost.

2. Milk in recipes. How much exactly? Can I make buttermilk biscuits or is that too intense? A sauce with some cream in it? I don't want to use tons of milk anyways, but every once in a while would be nice.

3. Most spices. I have NO CLUE here. Cumin, coriander, paprika?  Are nutmeg, cinnamon, cardamom too spicy still? I think those are the 3 I want to use most.

If anyone has answers it would be much appreciated! My birthday is saturday and I would love to be able to go out to dinner (the two times i tried eating out since I started treatment ended in tears of frustration) or bake something new for a treat!

(By the way happy birthday! And my birthday's two days after you so I really understand re: wanting to culinarily celebrate.)  I also second that about the food list being vague!! and think she should discuss further on the next support call or amend the list.
1. Any cheese that's hard and says it's mild (i.e. mild cheddar). Except on the last support group she said mild goat and feta cheese, even though not hard, are ok to try at List 3.
2. First try a small amount, like 1/4 cup, of milk in something and see if you tolerate.  Then if ok, maybe try 1/2 cup in something again, just to be sure.  Then if ok, I think it's fine to have something like biscuits if it's just occasional and you're not having many per sitting.
3.  Spices - Just not the reeeeally strong/spicey ones like cumin, cayenne pepper, etc.  Like nothing in hot Indian/Mexican food.  I think nutmeg and cardamom are ok, but cinnamon I'm not sure of and would like her input.

Thanks for the help Lisa! I decided to go for it on goat cheese and was fine. Does anyone have any idea about oats?  Oh, and I have an appointment with Matia next friday and plan on asking lots of diet questions so will post some info when i get it if you (or anyone else) wants it :)

Yes, absolutely, please post whatever you learn. There are so many "holes" in the diet list.  I also wonder re: oats and natural oatmeal.

thanks lisa! is anyone on list 3 afraid to eat blueberries and grapefruit? matia says i can but it just scares me b/c of the sugar!

I've been really nervous about acidic foods, but I decided to just do it one day and ate grapefruit and guess what? I was fine. haha. I also ate tomatoes and was fine. But then I tried black tea and reacted. STRANGE. I don't really understand food reactions and want to look into it more, or maybe there is no reason behind it? I say go for it. They do have sugar, but blueberries have a lot of fiber and good stuff in them. I mean, vegetables can have high sugar content too, so I wouldn't worry too much. Grapefruit tasted so amazing, you should really go for it!Is food for life the ezekiel brand? With all the sprouted grains? Isn't there soybeans in that and lentils? Or are these things okay since they're "sprouted"? So I was enlightened on the "spices" during my appointment with Matia. It basically sounds like no spices are allowed, just any herb, so maybe the wording should be changed. I had already tried turmeric and a little paprika though and didn't react, but I'm going to stop there (despite my serious desire for cinnamon!).Matia also said no worries about milk in recipes, usually people don't have problems if it's cooked and it's never in such a big quantity that it'll cause issues. You guys may already know this stuff but just passing along a little info.

Oh and lisa i can totally relate about the oatmeal fantasies! I asked her about oats too and was so disappointed it was a big fat NO! OH well. I thought about attempting to make my own "granola" with spelt flakes, but am not sure if they bake like oats. guess i'll find out...

Like you, I was reluctant to try blueberries but I finally tried them and had no problems. I've been adding them to plain yogurt-yummmmm! Grapefruit and tomatoes are the ones that make me really nervous. Whitney's post gives me courage. I'll let you know how they go.

thanks guys for all the feedback. for those of you who are able to eat bluberries and grapefruit, how much are you eating daily? i plan on asking matia more about this, but was just curious as to what everyone else does!

She said 1/2 cup a day. When we are fully symptom free we should be eating 2 serving of fruit a day. I also asked her if I could cook my 1/2 cup of blueberries down to a jam and eat it and she said yes, but no added sugar. Tammy

Spelt and kamut are not gluten free FYI.  I was gluten free for a year and once I started this diet, I had to go back to eating gluten just to be able to get sugar free/yeast free bread (spelt and kamut).  I prefer to eat GF but all the breads out there (millet, ezekial) have something not approved in them.  I asked Matia about Ezekial and she said no.  Even though it's sprouted.  Millet is too drying she said.

ya i havent had any bread in a really long time b/c of the gluten issue. i pretty much live on rice cakes for my carb. what does everyone do for snacks? i usually snack on avocados i eat like 2 a day! i feel like im going to turn into one lol, but they r so delicious and easy!

I'm avoiding gluten, so I make rice flour pancakes: brown rice flour and water - mix together to a runny consistency and cook on an oiled griddle. U can also use a mix of rice flour and potato flour.

I've just been putting some olive oil on them, otherwise they would be a bit dry - the pancakes taste a little bit sweet already, the cooking process brings out the sweetness (I guess this is the sweetness concentrated in brown rice syrup). I've just started eating small amts of blueberry, so I will eat them with bberries for a treat. I make 2 days worth at a time and keep them in the fridge, heating them up in my toaster - they get nice and crisp, I love the crispy texture.
