I am also going to Matia in October and have started the diet.  You can also get potatoes if they do not bother you, I feel like sometimes I flare from them.. I get my meat and fish from the health food store to make sure its antibiotic and hormone free, although I have not heard Matia's take on that yet.  Keep your fridge stocked with lots of the veges on the list, and make sure you are making them half your meal.  I also made turkey sausage today, it was pretty good.  I took ground turkey (not the kind at normal supermarket with natural flavorings)  You need to watch out with any meat that has natural flavorings added)  and rolled them around in olive oil, basil, dill, and sea salt and cooked them;. You can also type in list one in the search and thread will come up that will be helpful.  I do not know what I would do without my eggs in the morning, but since you do not like them you could do the turkey sausage idea. This is what a typical day on Matias list one looks for me:
Breakfast:  Cooked Zucchini in egg on top of brown rice cake, or yeast sugar free bread.  Some people react to any grains, so watch out for this.
Lunch: Cooked shrimp or chicken with steamed broccoli and cauliflower and a salad with iceberg lettuce and cut up yellow squash/ pule olive oil and REAL salt as dressing
Dinner: Cooked salmon or beef, with brown rice and a steamed vege
Snack: Plain rice crackers I found at health food store.  I put olive oil on them and REAL salt and bake them at 350 for 10 minutes, then take them out and put pure garlic powder on them.  They are very crunchy and good!
We are starting this journey together:)

What is REAL salt?

REAL salt is a brand of sea salt.  You can get it at Whole Foods and is a natural form of sea salt that has more than 50 trace minerals.  It tastes great and adds good flavor to food....www.realsalt.com

Just because it's on list one doesn't mean you will tollerate ALL the things. I would not consume all those spices untill your pain is decreased maybe just stick with trying the basil and see how  you do on that and go from there. The meats do not have to be organic but make sure there antibotic free. If you hate eggs you will have to just eat another animal protien for breakfist for now. there were things i thought i hated too when i first started but they are now some of my favorite foods lol. Also if you can't do the brown rice go ahead and try the white and different potatos seem to effect people differently.I tend to do best with the red ones personally.Take things one at a time. THis will get easier as you progress in treatment. I am happy for you to begin your new journey to true health.

with Nicole, start out with one spice at a time.  I cannot tolerate butter and celery even though they are on list one.  I saw a post somewhere saying Matia was moving cucumber to list 2, but I do not have a problem with them, although others do.

Yes, I will agree with Nicole... there are things on List one I cannot have, but I can have certain things on LIst 3 with NOOO problem... I have been with Matia for a long time and recently and completely cut out gluten and wheat products.. My symptoms are almost down to zero.  Ironically, there are many celiacs patients who also say they have IC, but when they finally were diagnosed with celiacs and cut out wheat, their IC symptoms disappeared.... Stick with what Matia says obviously, but try each thing isolated by itself.

Does the potassium in real salt bother any of you?

not for me but i wouldn't use this on list one. At least till you know more whats going on. For me it helped me with my fatigue some i think bc of the iodine i got less vertigo when i started to use it.

what exactly is the difference between real salt and other sea salts? i've used a number of different kinds of sea salts (celtic, himalayan, frontier) and never noticed a difference between them. they all just have sea salt as the ingredient (some also have an anti-caking agent). i use all interchangeably, so would love to know if there is a reason i shouldn't be doing that! thanks.
