I ate potatoes when I quit grains for a year.  Can you eat potatoes?  I don't do well on eggs either.  If you can tolerate the brown rice, that would be good.  I think spelt and kamut are both related to wheat.  I tend to do better on unbleached wheat flour rather than whole grain flours.  Whole grains make my bladder worse.

I would at least give spelt a try.  I hope you can tolerate it as spelt ads a lot of variety to the diet.

i took the allergy testing and came up with a billion allergies the eggs were high on the list. It took me about 5 months to tolerate them again. I am hoping to have my grains back soon.

I eat rice and potatoes... I know it feels very limiting... however, try and keep things in perspective... In Asian countries... they don't feel limited with just eating rice... it is all they know!  For me... the most difficult thing to over come was the mental aspect of this thing... Don't get me wrong... i still struggle... But once I completely removed all gluten containing grains from my diet... I was SHOCKED at how good my bladder felt!  I am still working through other things... but even thinking about eating gluten containing products gives me the hee-bee-jeebies!
You can probably eat rice and potatoes just fine.  I make a breakfast quiche with no crust with eggs, ground turkey, spinach, onions, and white rice... it is very good.
you can make a crust out of almond meal (if you can tolerate it) and rice flour.  Just be care ful as some "forms" of rice are too difficult for the intestines to break down... You can also add hashbrowns to the quiche if rice sounds icky to you.
I have gone on foodnetwork.com and found recipes with salmon in a potato crust... very good.  look at this as an opportunity that you wouldn't have take otherwise to experiment.  I know being a mom how hard and time consuming it is to have to do this, but it is worth it.  Don't give up!  Keep your chin up...

I couldn't tolerate rice in grain form for a long time and just ate rice flour products - just for a change from potatoes. U can make yr own rice flour pancakes or u can buy brown rice tortillas in Wholefoods - if u dampen them before heating they taste quite good.
