veggies instead of pasta

for those of you that can't eat grains right now but are really missing eating pasta with tomato sauce (always a major craving for me), just wanted to share an alternative that helps hit the spot for me. instead of pasta, i use roasted veggies.

i grease a pan with olive oil then throw a bunch of cut up cauliflower, broccoli and/or zucchini in it (these are my main veggies at this point in treatment) - then i roast them for about 25 mins at 450 degrees.i like when my veggies get brown - almost burnt, so sometimes i even leave them in a bit longer.

in the meantime, i brown some ground beef. then i throw the browned meat into a pot with this great bottled tomato sauce i found at whole foods: Cucina Antico - tomato & basil. this is one of the few sauces i've found that has no garlic in it (i think i react a bit to garlic). add a bunch of sea salt (and oregano if you can), simmer for about 20 mins, and your're good to go.

i eat this at least a few times a week. super easy, really tasty, and it really helps to ease the pasta cravings.

FYI to List 3/4ers -- In addition to Cucina Antica, my search for no-sugar & ingredient-ok jarred pasta sauce turned up Lucini (kinda fluted shape bottle) and Amy's (roasted garlic I think).  Note- they do have ex vgn olive oil.
