I agree, but I have only been doing it one week!!!  I just talked to Natisha and she said she has been sugar free after 5 years!!!  But--- she said there is ice cream and baking in the future with Agave so that will be something to look forward too.  I just want to get better and out of pain.  I am really serious about this thing and can't wait till my apt. Nov 18. But I hear you loud and clear...for now cooking just for me is taking all my effort to figure out what to eat.  The family eats other food which is hard.  Thank heaven for tuna and the mayo recipe, turkey bone soup with all the veggies and rice, garlic toast with rice bread, beef roast with gravy with rice flour and salad with lettuce, red and green cabbage and the mayo with dill for dressing. You make me laugh and glad to know you, and know that I am not alone!!!!

Yeah, I cook two meals every time, one for my family and one for me.  All day I am in the kitchen: cooking, cleaning, chopping, cleaning again..and then off to the store.  Eating healthy is a full time job! I actually went to get sugar tonight in my car, and then went back home after much struggle in my soul but...I DID IT.  I got through a horrid craving without sugar..I eat corn chips and cheese, but no sugar.

WEN57What is the mayo you are referring to ?  Is this ok for list 1?

I found the homemade mayo in the recipes on this site.  I cracked 2 eggs in a tub and microwaved them about 20 -30 seconds to kill any bacteria. Just a little of the whites cooked and they were pretty hot.  I put them in the blender and mixed.  Added 1 cup olive oil and mixed.  Added a little dill and salt to taste.  Put in a jar in the fridge.  I use it for dressing, egg salad, tuna salad, sandwitch spread for meat sandwitches with rice bread and lettuce.  Not too bad.

Hopefully you can convince your fam to join you in this healthy lifestyle and when your adding new foods back in you will not need to cook two meals. I mean a lot of people want my food there is no reason why they shouldn't eat it with you. I can understand not ALL the time because it is limitied at list one but the dinners are not bad. And really just because there not in pain I bet allergies are there they think there well and most people have yeast issues digestion issues and have no clue.

Yeah, my 12 year old def. has a yeast issue, but its hard because he is at the age he can take his allowance and buy sugar himself, get it at friends house, and at his Dads.  We do not keep any food in the house with sugar or even preservatives.  The two little ones I have would be easy to feed my meals.  I am going to try making the family the same dinner for a week as me and see how it goes and if we can afford it.

I would keep the diet really simple and take it easy on yourself.  My kids are 5,7 & 9.  They are picky, which works to my advantage.  For dinner, I cook meat, starch, and vegetables.  I use the grill a lot.  They like grilled chicken, steak, burgers...  I cook in large quantities and keep an emergency meal in the freezer for when I have a bad day.  We also have easy meals like nachoes and spagetti.    I adapt them for myself by using lettuce as a base for the nachoes and use olive oil as a sauce for the spagetti.  On Sundays, we eat  roast in the crockpot.  My husband is a great cook and I recruit him twice a week to make something interesting.   To help prevent cheating, I buy one expensive meat item for myself each week.  I seem to be most tempted to cheat on the weekends.  Right, now I am into lamb.  We have a helathy grocery store near my home that runs amazing specials every week.  Last week, Sprouts had lobster tails for $5.  Each week, you will find that food preparation comes more naturallly.

If you have one day/week that has more time, and you get a lot of tupperwares, you can get a lot of cooking done for the week and I've been surprised at how long some fresh things last for.
For instance, I make a big batch of broccoli for my breakfasts on Monday and I find that it lasts just fine for THE WHOLE WEEK!  I also make two big salads that can last the whole week, as well as big batches of veggies, and rice (can last even longer than a week if you have to).  I also often make main dishes (i.e. stuffed peppers, chicken stir fry) to last for a few days (or freeze for future) since I'm not home some nights.
This really helps rather than being in the kitchen for hours each day.

How do you keep things fresh?  Matia told us in a call not to use our freezer because it changes the food nutrient .  I was not sure how long meat can stay in the fridge. Thats a good idea to make the salads..Does the lettuce stay good?

I use glass Pyrex tupperwares, nothing fancy just from Target, it seems to do the trick.  I get the Earthbound Farm lettuce and if it's visibly fresh it lasts a week honestly with little change.  Some veggies like the broccoli last me a week, others 3-4 days. Rice definitely 1+ week.  Meat I don't do for more than 3 days in the fridge. I don't really freeze anything.

I also scrambled 8 eggs one day with water, salt and butter.  Divided into 4 tupperwares.  Roasted 4 red potatoes the night before in olive oil and added one to each tub.  Breakfast for 4 days and very yummy!.

These are great ideas! Thank you!  I can see you must like to cook.  I can not cook at all which leads me to my next question...how do you roast potatoes...just peel cut and put in pan with olive oil?

I like red potatoes best (I don't peel them because the skin is thin and has lots of vitamins, but you can use any.) Unpeeled is fancy and gourmet/vogue.  With bigger bakers I would peel them. Just wash and put 5-6 in meatloaf pan with olive oil.  Cover with foil and bake 350 for 30-40 min.  Can store in pan or baggie in fridge for about a week.I tried the flat bread recipe- really good.  Just put flat bread in the search and the thread will come up.  I used spelt flour but you could use brown rice flour or potatoe flour.  I will probably buy potatoe flour next.  I find this stuff at a health food store or Kroger in IN.  Kroger has a good organic section in my town.  I put in some dill and basil.  Great spread with garlic butter or dipped in some olive oil like an italian kitchen.  You can even add spices to the oil like the fancy places do.  Tonight I will make garlic mashed potatoes- boil red potatoes 30 min.  Add a little water instead of milk, butter, salt and garlic.  Mash.  Just like a fancy restaraunt. Hey, when I get to list 2-3 we can add pepper and cheeze. I bet meat broth would be good too.  When I roast meat I make gravy with flour and water and salt.  I save the bones and boil broth and store in the fridge. I pour the gravy or broth over the steamed veggies and make lots of soups with meat, rice, and veggies.  It helps disguise the veggies.
