Meatloaf?

Hi all,

I've checked the recipes page and can't seem to find anything for a meatloaf.  

Anyone have suggestions?  I am on list 3 and can eat tomatoes.  I'm tired of the same old ground beef and want to make a hearty meal that will please my husband as well as adhere to my IC diet.

2lbs ground beef
2eggs
1/2 onion chopped
1/3 cup tomatoe sauce (can cook fresh chopped tom. to make your own chunky sauce)
1/4 cup fresh chopped parsley
1 t. ground sage
1t. salt
1/2 pepper
1 cup bread crumbs (if you can have them,still good without)
1/4 cup milk (if you use bread crumbs)
Mix all together and form into loaf.  Bake in pre-heated oven 400 degrees for 20 min.. Reduce heat to 300 degrees and cook for 1 1/4 hr more.

Thank you!  I bought some spelt bread today and will attempt to make bread crumbs.  I forgot milk!!  Oh no!  I will try it anyway.

I subsitute beef for the turkey in the turkey loaf on here.  Its amazing!  Or I use lamb with feta.

So I made the meatloaf and it was great, but I changed things up a little and thought I'd share:
In addition to just meat with onion, I also chopped in my food processor some kale, carrot, garlic and thyme.  I had some leftover millet and added all of that to the mixture.  It turned out to be a mighty healthy meatloaf with lots of tiny pieces of kale.  If you can't do carrots you could at least do kale most likely or shredded up broccoli perhaps.  
Anyway, it turned out great.  I appreciate the info!

I made meat loaf after reading this and tried to mix in veggies...always trying to increase them.  I added onion, peppers, zuchini, and potatoe instead of crackers or oats.  I didn't even think to add spicich...maybe next time.
