My husband loves to stir fry. I just read on the BoMa med sight that olive oil is not reccomended for high heat cooking. Does canola oil work? If not, should I stop frying things until later in treatment? Sometimes, he cooks with buter but it burns easily. Are there any articles on the dangers of cooking oil with high heat?
IF your oil is turning brown
IF your oil is turning brown and smoking your burning the oil it will get bitter in taste. As long as you stay with in 350 degrees you should be ok.Canolia oil is high in acetaldehyde when fried and personally I have read other bad things on this oil i would not use it. Stick with the olive oil just watch your temps. Later on when your healthy use grapeseed for Frying. .Heating oil changes chemical structure of the oil and digestibility.Think pan fried if you most.the most advantageous thing with olive oil is that it has a high flash point allowing you to sear food at a high temp without burning .I bake my fries instead of deep frying them too. you can do batter fried in the pan with out deep frying using olive oil just watch your temps you may need to dump the oil in between and start fresh oil.
