Does anyone use Quinoa ? I have made hot porage with it but that is about it. I have to keep it gluten free so I can't add spelt flour. I am wondering if any of you have worked with it and have any sugestions? For those of you who haven't it is kind like oatmeal in it's texture and taste but way way more mild. like if you crossed rice with it.

I cook mine in chicken broth and then make a salad out of it. not sure what you can have yet, but i use the following: persian cucumbers, cilantro, garlic powder, shredded carrots, olive oil and make a cold salad out of it. I add other things too, but am forgetting right now. oh yeah, almond slivers in the salad too. very good.

I made a quinoa griddle cake that is really good. Prepare some quinoa, mix in some chopped vegetables, and any herbs and spices you can have. Fold in a few eggs then fry them in oil until they are golden brown.
