Snack Foods?

HI all

Could anyone let me have any suggestions for snack foods that are allowable on list 1 and 2.

I am finding it difficult at the moment as I am coming over really hungry all of a sudden at various times and need something quick to eat as I start getting really shaky and weak.

I have no intention of cheating but feel I need to be able to feed as my body is clearly needing nourishment.

Any suggestions would be greatly appreciated.

Hoping to hear from some of you.

While I was on list one I snacked on brown rice cakes with butter and potato chips cooked in olive or canola oil. Sliced up cucumbers with alittle salt are good too!

I take an item from the list 1 and eat it as snack: boiled or fried egg, cucumber with sea salt, plain lettuce leaves, piece of meat, rice cakes with butter, smaller salad with olive oil. I also bake zucchini muffins a few times a week. They are great with butter as snacks.

Blondy- For the zucchini muffins on list one.... do you use a recipe from this website or one you have made up? They sound like a welcome treat:)

I use the recipe from this site. I got it down to a streamline process and can mix it with my eyes closed. :)  
I tried the recipe with rice flour and had a reaction, only spelt flour works for me now. Somehow it escaped me that the flour I was using was not organic. I ordered organic spelt flour from a mill in NY recommended by someone on this forum.

Ugh! I am so jealous you guys can handle rice crackers and sea salt. I seem to react to sea salt really bad.  I wonder if anyone else does.  The muffins sound amazing.  I wish I could eat them. I guess I have not tried the spelt flour. Does anyone do well with spelt but not rice or potatoes?

Have you tried Hymalayan Salt? Matia said that's the best you use. I bought a bag from Amazon, I love it!

thanks Christine for the suggestion I am going to try that for sure!  Is there any brand in particular that u order? Everything would taste so amazing if I could have salt. :)

I think they are all pretty much the same though! I hope it works for you. I am a salt addict!

Hi, I just made another batch of muffins. I wanted to let you know that they do come out from the oven a little soft. If you let them sit, they harden. I eat them right away, knowing that sometimes I have to use a spoon to do that. They are still wonderful, with butter. They turn from soft to much harder consistency them in a few hours or next day.

Hi all,
Just discovered Covered Bridge potato chips.  Only ingredients are russet potatoes, canola oil and sea salt. Quite amazing.

Can you have avocados? I couldn't when i first moved to List 2, but now i am ok with them. I mash them with a fork and put over a slice of Spelt bread or a rice cake. I also recently started making spelt flour cookies with ground beef and little bit onion and salt. They don't rise too much, but hey, i don't care, i still love the look of them over eating raw broccoli :)
