I'm finding it hard to have 50% veggies at every meal (on List 1) so I thought I would ask for any tips and share mine. I found a recipe for Cucumber Soup from Delia Smith (Brit cookery writer) which really helps me eat lots of cucumber, lettuce and celery in a very tasty format. It can be served chilled as well but living in Britain where it is cold a lot of the time and our winter is upon us now it is really great to have it hot. See recipe under Soups.

I make a lot of soups too.  I make a cauliflower soup ( I add curry to mine, but I tolerate it) I cook it down in chicken broth with potato maybe and olive oil.  I use a hand blender to make it chunky or pour it into a blender for a smooth texture.  You can do the same with broccoli too.  I like to use chicken broth and olive oil as you get a richer flavor than using veggie broth.  Also, i make zucchini fritters and eat with yogurt.  I think if you search this site for zucchini fritters, you will find that recipe.  You may have to omit somethings.  Whole Foods has a great website with recipes for veggies.  I also make a chunky veggie soup with chicken, zucchini, summer squash, potato, and green cabbage.  Very yummy.  Hope this is helpful.  I usually can only do 1/3 veggies at lunch and dinner and try to have avocado with each breakfast.
