Egg Salad

Maybe you all are already doing this but I've started making "Egg Salad" for myself and it is soo good and filling and just making my overall life better.  So, I thought I would share:

1. Chop up 2-3 hard boiled eggs

2. Chop up a small avocado

3. Mash that together with probably about a 1/3 cup a greek yogurt

4. Dash with Sea Salt.

Nothing fancy but I had burnt myself out on hardboiled eggs for breakfast - this is helping!  Especially filling when trying to avoid the microwave at work!

Adding a bit of finely chopped onion or celery might be nice too!  I just haven't tried that yet.  Or adding a bit of paprika for those around List 3+, I believe.
