I read the 1st article and found it very insightful.  I think this is why Potaoes cause a flare in my Fibro symtpoms..cause they are so starchy.  I noticed when I eat no grains, my fibro goes away.

I have way less inflammation all over since cutting back on REFINED carbs... again, anything out of a box..  I really noticed this last week.. I made minestrone soup with "safe" brown rice pasta.  My stomach got so flared after and I finally put it together it was the pasta that was flaring me... Since cutting it out, or any thing refined regarless if it is on a safe list, I feel so much better.  Don't misunderstand me though, I still eat some grains, but I really really really make the effort to eat mostly veggies, followed by meat, followed by cooked brown rice or cooked potatoes... Here is an interesting find:
Give dairy, sugar, and refined grains a smaller spot on your plate. Too much dairy and white flour can kick the immune system into high gear, particularly if you're lactose intolerant or have celiac disease. In people who suffer from these conditions, the gut treats dairy and wheat products as hostile invaders: Often it only takes a bite of bread or a spoonful of ice cream to get the inflammatory cycle going. One exception to the dairy rule is eggs, especially those enriched with omega-3s.
"Sugary foods can also be a problem, especially when eaten between meals, since they cause a surge in blood sugar. To reestablish balance, the pancreas lets out a gush of insulin, which in turn switches on the genes involved in inflammation. This biochemical roller coaster is thought to contribute to the onset of Type 2 diabetes.
"When I'm trying to reduce people's inflammation, I make sure they knock out refined grains, dairy, and sugar," says LaValle. "You've got to get rid of the inflammatory chemistry."

I am sooo happy we have found Matia and this site!  I am learning SO much, that will be beneficial forever; and I think we will all be healthier than most as we get older after going through this.  We will have all this info to share with others when they get sick with something and they open there hearts and ears to listen!
