Amaranth ARRGH!

Hi Ladies

I have been wanting to try amaranth flour for a while since I don't do well with brown rice and spelt.  Well, I don' t know what i am doing wrong, but the middle just won't get firm.  I tried putting it back in at a higher temp, but the except for the very tops, these muffins are gooey, sticky, like wet mushy bread.  Anyone use this flour??

Are you making zucchini muffins?
Mine come out soft sometimes, but if I let them sit for a while, they harden.
Also, you can make pancakes from the same dough. I tried and they turned out delicious.
You can experiment with your recipe until you get desired consistency. I don't through my muffins away, no matter how bad they look, they still taste good, especially toasted with butter.

What type of butter is ok to use? Organic?  Does it matter :)

I found organic cultured butter. It is the best!

I only bake zucchini muffins and never get tired of them. The recipe is on this side under Recipes. I also make them with squash instead of zucchini for variety. Last time, I used organic yogurt instead of water. They turned out very good. Nice and rich snack.
