Description
Preheat oven to 350
Ingredients
1 1⁄2 c
spelt flour 1⁄2 t
baking soda 1⁄4 t
baking powder 1⁄4 t
salt 1 c
shredded Zucchini or yellow squash (I always add more than that!) 1⁄4 c
cooking oil 2
eggs (sometimes I add more eggs and less water gives them a yummy eggy flavor and helps them rise)Instructions
Mix all ingredients together and drop either into muffin cups almost to the rim or pour the entirety of the batter into a loaf pan. Bake for about 30 minutes or until they are nicely browned. These are delicious toasted with butter.
